Diet and fitness go together like guacamole and chips! One without the other is like cheating yourself out of the full experience. But once you’ve tasted it, you’ll keep going back for more. As Fitmark Ambassador, Bethany Ugarte says, “I cannot let go of this burning passion for health, fitness, and wellness!”
As a Raw Food Chef, Yoga Instructor and Crohn’s Fighter, Bethany has been on a quest to find the right balance between diet and fitness for more than 10 years. Working closely with a highly acclaimed holistic nutritionist, studying yoga, and conducting countless hours of research herself, this incredible journey has taken her down a path towards better health. She told us:
I don’t discriminate when it comes to what others eat, as each body is different and requires different things. As long as you’re getting the nourishment you need, and taking care of your body the best you know how, that’s all that matters.
Finding Balance Between Fitness and Diet
Finding the right foods to incorporate into your diet takes a lot of trial and error, and as your fitness goals change, so too does your diet. But when you have severe stomach issues, it’s a whole other ball game. One false move, just one wrong ingredient and you could throw off this delicate balance. Bethany told us:
I have followed a vegetarian, vegan, and paleo diet for different periods of my life, and now I’m 26, I have found what works for me and what doesn’t. Having severe stomach issues such as Crohn’s, I have to be very careful in not only what I eat, but how I eat and how it’s prepared.
Meal Prep and Clean Eats

With something like Crohn’s, you can’t take chances with anything that you eat. Even how you handle and store your food could have an impact on your digestive health. So for Bethany, when it comes to meal prep, food safety is key. She told us:
Many of us prep or at least cook our food once or twice a week, but I am a little cautious when it comes to food spoilage. So I like to cook my meals every other day to ensure nothing starts to grow in my fridge by day four!
Bethany’s approach to food involves using the finest ingredients and avoiding over-processed foods. She told us:
I personally follow a holistic approach (most of the time) and try to eat as many whole, unprocessed foods as possible without any preservatives. If it comes in a package, wrapper, can, or box….don’t eat it! That’s why meal prep is so important.

RAMEN BURGER RE-MAKE
With just three simple ingredients, you can have a nutritious, carb-free burger bun to accompany your burger of choice.
Makes 2 carb-free buns (top and bottom)
- 1 large zucchini
- 2 egg whites
- Spice of choice to taste
- Spiralize your zucchini & mix your zoodles with egg whites in a bowl with hands to fully coat. Season to taste.
- Separate zoodles into 2 parts and place inside ramekins. Cover with wax paper and smash down with a canned food item (ie: canned beans) and keep the can inside each ramekin to compress zoodles & place in fridge for at least 30 minutes (can be up to 24 hours if you want to prepare ahead of time) to set.
- Remove from fridge and heat a pan with cooking spray/coconut oil and sear each side (smash down w/spatula while cooking). “Charred” ends is good/normal. Serve as you would with any burger/veg burger, etc.
In a way, Bethany’s journey has been a bit of a crusade, as she’s bravely navigated the turmoils of food and its many transformations, making it easier for other people with stomach issues and food allergies.
