If you’re like Fitmark Ambassador Jessica Franklin and consider yourself a finicky eater, switching to healthy food is going to take some getting used to. But that doesn’t mean you can’t do it. Jessica told us:
I’m a pretty picky eater, so in the beginning I had to force myself to stop eating fast food and prep my own healthy meals. I learned how to meal prep!

In a way, Jessica had no choice but to start living a more healthy lifestyle. After getting a report back from her doctor announcing her as ‘morbidly obese,’ she knew it was time to do something about it. She told us:
I had struggled with my weight my whole life, and I knew I was overweight, but seeing those words written across that paper was an eye opener. It was hurtful, but it was all the motivation I needed to get my health and weight under control. Hypertension runs in my family and I did not want to be diagnosed with high blood pressure at the age of 24.
The Weight Loss Journey
Jessica started her weight loss journey at 262 pounds and with some serious commitment has brought it down to 194 pounds. Her goal weight is 170 pounds, so she still has a way to go, but she knows the journey is a steady one with no quick-fix solutions.
Just remember to be patient with yourself and make the transition to healthy food slowly. If you’re planning your meals effectively and tracking everything you eat, you’re well on your way. Make sure to give yourself a cheat meal each week and lots of variety too. Here’s a tip from Jessica:
I was eating a lot of the same meals week after week and started to miss the unhealthy foods I used to eat. After a lot of trial and error, I finally figured out a way to prepare a healthier version of my favorite foods!
Meal Prep Food You Love
So there’s the trick – prepare the meals you know you’re going to love. Healthy turkey burgers are possible, so are healthy tacos, burritos and pizza. You can create anything healthy and still stick to your diet. It’s all about the meal prep.
Here are a few meal prep tips from Jessica to help you get started:
- Try prepping 3 days’ worth of food at a time, just in case you get burned out on eating the same meals (we don’t want to waste food!)
- Plan your meals before you go to the grocery store!
- Stick to your plan!
- Buy lots of food containers.
- Try new meals, and don’t be afraid to mix and match foods!
- Try Mason jar salads (the lettuce stays crisp for up to 5 days).
